Legend has it that at its invention, the Bloody Mary was named after England’s infamous Queen Mary. Or, after a Chicago cocktail waitress bearing the same name. Or still, a silent movie actress. The exact origin of the brunch drink you know and love may be up for debate, but you can be sure -- its seasonings have come a long way since the days of its first venture into a cocktail glass. (We have no interest in going back.) We’ll take ours extra spicy and seasoned to perfection with chiles, peppers, and a healthy dose of horseradish. It all started, as most good things do, with an idea to make something better: bartender Demitri Pallis was frustrated with the inconsistency of his bar’s Bloody Marys. Instead of complaining, he took to mixing Marys -- for over a year -- until he found just the right balance of savory spice. It’s the perfect solution, literally.
