Ask co-founder of Catskill Provisions Claire Marin what drove her to create a premier artisanal honey and maple syrup company in the mountains of upstate New York after not one, but two successful careers, and you’ll get a simple answer: “The bees made me do it.” Inspired by insects with a work ethic perhaps even more dedicated than her own, she turned beekeeping from hobby to full-time and began producing a line of raw, wildflower honey and a crowd favorite: the Raw Honeycomb. Completely sold out on her website and used by top NY restaurants, Catskill’s Raw Honeycomb has a unique, slightly floral flavor that elevates cheese and dessert platters alike. Lucky for us, Marin is releasing a limited quantity exclusively to the Food52 community.

But she doesn’t stop at honey. Because their bees help to pollinate local maple trees, Catskill has been able to add maple syrup -- tapped and bottled by a fourth generation area farmer -- to their line of products. It’s nature giving back, at its very best.
